Instead of constant gloom and doom and losses.

How are you spending your Christmas?

Christmas Eve: at my home.
Making a red sauce with meatballs, sausage, spareribs with rigatoni and Chicken Parmesan. Bread and Garlic Bread. Fried breadcrumbs for topping.

App: Fried Eggplant dusted with freshly grated Romano. Salad.

Raspberry Cheesecake. Assorted homemade cookies.

Christmas Day: to my Brothers for
App: Fried Cauliflower and Zucchini, Caesar Salad
Main dish: Lasagna, sausage and peppers
Dessert: Strawberry Cheesecake, Italian Cookies and biscuits.

I’m telling you, with a homemade sauce, find a way to integrate fatty pork in there. Not baby back ribs, too little fat. Spare ribs.

If you’ve never had breadcrumbs as a topping, try it. Just use light olive oil and toss in the breadcrumbs and give it a few minutes, constantly tossing the breadcrumbs so they don’t burn. Get to a deeper golden color. Adds a fantastic texture as a topping (for red sauce) to your plate.

Everything but the cheesecakes will be homemade. Love the smell of the house.

Yes, friends and family. Don’t want to hear it. My choice.
