For the last tailgate of the year...

Spanish Paella. (It a rice dish similar to jambalaya)

It's cooked in a big pan (think Spartan Shield from the movie 300, feeds about 25 people) over wood and charcoal.

Paella includes rice, chicken, sausage, onions, peppers, garlic, smoked paprika, saffron and crushed tomato.

May use second smaller pallea pan (feeds 5-8) to do a seafood version with shrimp and calamari.

Only downside to paella is it requires constant attention and gets in the way if my beer drinking.

Side dishes will be grilled bread with tomato and garlic and roasted Padron peppers (like jalapenos but little to no heat. You throw them in olive oil blister the skin and add some sea salt done.) Every once in awhile you get one with a little heat but thats what beer is for.

Plus the standard chips and dip.
 
Bull, you need to make some soup to go with that rice, no? Need menudo rojo! OK, now I am hungry.
Nah, not with paella, its a meal by itself. Not that it might not be cold enough for it by game time. We did do soup a couple years back with some Caldo de Res (short rib stew) and pozole.
